Ha sido una costumbre, una excusa para reunirse y una expresi\u00f3n de la cultura mediterr\u00e1nea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sin embargo, los cambios en los h\u00e1bitos de consumo han impulsado el desarrollo de nuevas propuestas capaces de conservar la esencia del aperitivo tradicional adapt\u00e1ndose a un consumidor cada vez m\u00e1s interesado en opciones de baja o nula graduaci\u00f3n alcoh\u00f3lica. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Elaborado por <a href=\"https:\/\/www.juantorresmasterdistillers.com\/es\" target=\"_blank\" rel=\"noopener\" title=\"\">Juan Torres Master Distillers<\/a>, la divisi\u00f3n especializada en destilados de la hist\u00f3rica <a href=\"https:\/\/www.torres.es\/\" target=\"_blank\" rel=\"noopener\" title=\"\">Familia Torres<\/a>, Casals Zero representa la uni\u00f3n entre tradici\u00f3n, investigaci\u00f3n y tecnolog\u00eda. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">No se trata simplemente de un vermut al que se le ha retirado el alcohol, sino de un proyecto concebido para preservar toda la complejidad arom\u00e1tica y gustativa de un vermut cl\u00e1sico manteniendo una graduaci\u00f3n m\u00ednima. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Un legado que se remonta a casi un siglo<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">La historia de Casals Zero est\u00e1 estrechamente ligada a la trayectoria de la familia Torres. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">El origen de esta aventura se remonta a 1928, cuando Juan Torres Casals impuls\u00f3 la destilaci\u00f3n de vinos dentro de la empresa familiar, sentando las bases de una actividad que con el paso de las d\u00e9cadas se convertir\u00eda en una referencia internacional.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A esa experiencia centenaria se suma otro elemento fundamental: el conocimiento adquirido por Familia Torres en el \u00e1mbito de la desalcoholizaci\u00f3n desde el lanzamiento de Natureo en 2008. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La combinaci\u00f3n de ambas especialidades ha permitido desarrollar un vermut innovador que conserva la identidad del producto original y responde a las nuevas tendencias de consumo.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full has-custom-border\"><img loading=\"lazy\" decoding=\"async\" width=\"558\" height=\"751\" src=\"https:\/\/rtvgastro.es\/wp-content\/uploads\/2026\/06\/Captura-de-pantalla-2026-06-18-115226.png\" alt=\"Casals zero una propuesta de vermut sin alcohol de la familia torres\" class=\"wp-image-5607\" style=\"border-top-left-radius:20px;border-top-right-radius:20px;border-bottom-left-radius:20px;border-bottom-right-radius:20px\" srcset=\"https:\/\/rtvgastro.es\/wp-content\/uploads\/2026\/06\/Captura-de-pantalla-2026-06-18-115226.png 558w, https:\/\/rtvgastro.es\/wp-content\/uploads\/2026\/06\/Captura-de-pantalla-2026-06-18-115226-223x300.png 223w, https:\/\/rtvgastro.es\/wp-content\/uploads\/2026\/06\/Captura-de-pantalla-2026-06-18-115226-9x12.png 9w\" sizes=\"auto, (max-width: 558px) 100vw, 558px\" \/><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\">Un proceso de elaboraci\u00f3n basado en la precisi\u00f3n<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Casals Zero nace a partir del vermut rojo Casals tradicional. La base v\u00ednica incorpora la variedad ancestral Selma, una uva recuperada por Familia Torres dentro de su programa de conservaci\u00f3n del patrimonio vit\u00edcola catal\u00e1n. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sobre esta base se realiza una infusi\u00f3n con m\u00e1s de veinte bot\u00e1nicos mediterr\u00e1neos, entre los que destacan la piel de naranja, la mandarina, la hoja de olivo, el tomillo, el romero, la canela, el cardamomo, el clavo o el ajenjo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La clave del proceso reside en la utilizaci\u00f3n de la tecnolog\u00eda Spinning Cone Column (SCC) o Columna de Conos Rotatorios. En boca es sabroso, equilibrado, con un buen amargor.
