Hace algunas semanas, antes de que esto del COVID\u201919 nos amargara a todos y todas un poco, revolviendo por mi bodega me encontr\u00e9 una colecci\u00f3n de botellas que hab\u00eda adquirido en los a\u00f1os 1999 y 2000, una colecci\u00f3n de #manzanilla que la bodega Barbadillo, de Sanl\u00facar de Barrameda, saca al mercado con etiquetas relacionadas con la fauna de Do\u00f1ana, concretamente sacas de las diferentes estaciones del a\u00f1o. Estas botellas estuvieron durmiendo durante 20 y 21 a\u00f1os respectivamente para poder disfrutarlas ahora. Algunas las prob\u00e9 con amigos y otras en la tranquilidad de mi casa, donde el an\u00e1lisis siempre es mas profundo y el disfrute tambi\u00e9n.<\/p>\n\n\n\n<figure class=\"wp-block-image (max-width: 768px) 100vw, 768px\" \/><\/figure>\n\n\n\n<p>Tengo que decir en primer lugar que es incre\u00edble la evoluci\u00f3n de estos vinos tras todos estos a\u00f1os de guarda, part\u00edan de una gran base y esto ayud\u00f3 mucho, su color amontillado, su complejidad arom\u00e1tica en la que aparecen una buena colecci\u00f3n de frutos secos y su extraordinaria boca en la que la elegancia salina deja entrever tostados, avellanados y complejidad absoluta con un largo final.<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped wp-block-gallery-1 (max-width: 768px) 100vw, 768px\" \/><\/figure>\n<\/figure>\n\n\n\n<p>Barbadillo es una de las bodegas mas importantes del #marcodejerez, instalada en Sanl\u00facar de Barrameda desde 1821 y haci\u00e9ndonos disfrutar de aut\u00e9nticas joyas como su amontillado Principe (tuve la suerte de probar una botella con muchos caminos del Roc\u00edo y mas de 20 a\u00f1os en manos de mi buen amigo Juan de Sanlucar, el palo cortado Obispo Gac\u00f3n (otra botella vieja, vieja que me regal\u00f3 Juan, su manzanilla pasada Pastora o la famosa Solear que en 2015 fue considerada la mejor\u00a0manzanilla del mundo por la prestigiosa revista vin\u00edcola Wine Spectator. Adem\u00e1s hace vinos tranquilos quiz\u00e1 el mas conocido sea Castillo de San Diego (actualmente Barbadillo) que comercializan desde 1975.\u00a0<\/p>\n\n\n\n<p>En los \u00faltimos tiempos me han sorprendido especialmente los vinos que comercializan bajo la marca ZEREJ, Jerez de vuelta y media, he podido disfrutar el oloroso, seco, elegante nariz, con una gran complejidad arom\u00e1tica, sabroso, cierto amargor y largo final que invita al siguiente trago. El palo cortado, el vino de los vinos, una de esas rarezas que nos da la crianza biol\u00f3gica que camina hacia la oxidativa, este vino lo tiene casi todo, el atractivo de una manzanilla vieja, la elegancia de un amontillado y la complejidad de un buen oloroso, todos para uno y uno para todos, es sin lugar a dudas el que mas me gust\u00f3 de los tres. Y el amontillado, tengo claro que cada d\u00eda me gustan mas este tipo de vinos, cuando lo tiene todo como este\u00a0solo puedo darles las gracias a Armando Guerra y a Montserrat Molina por haber creado estas aut\u00e9nticas joyas. Otro de los vinos que tuve la suerte de disfrutar \u00faltimamente, fue la manzanilla en rama Nave Trinidad, elaborada en la primog\u00e9nita de las bodegas de Barbadillo El Toro, 36 botas de este interesante vino que tiene una crianza media de 4 a\u00f1os.<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped wp-block-gallery-2 is-layout-flex Barbadillo nunca dejar\u00e1 de sorprendernos con placeres vin\u00edcolas como estos que describo, la pena que tengo es que ya solo me queda una botella de la a\u00f1eja manzanilla en
