Es costumbre su consumo para cenar o desayunar acompa\u00f1ado de huevos cocidos o salami pasado por la sart\u00e9n.<\/p>\n\n\n\n<p>El mang\u00fa no deja de ser pl\u00e1tano macho pelado y hervido en agua con sal. Luego en caliente se maja con mantequilla o aceite y se le a\u00f1ade un poco de agua de la cocci\u00f3n. <\/p>\n\n\n\n<p>En los hogares el majado lo hacen con cualquier cosa, un bote de cristal, un mazo de mortero, etc. El resultado es un pur\u00e9 m\u00e1s o menos tosco, pero de sabor intenso y textura agradable. Lo suelen acompa\u00f1ar de cebolla morada cortada en juliana y ligeramente pasada por la sart\u00e9n.<\/p>\n\n\n\n<p>El bacalao es el pescado de mayor consumo en el pa\u00eds, cosa curiosa al tener tantos kil\u00f3metros\u00a0 de costa. <\/p>\n\n\n\n<figure class=\"wp-block-image size-large has-custom-border\"><img loading=\"lazy\" decoding=\"async\" width=\"768\" height=\"1024\" src=\"https:\/\/rtvgastro.es\/wp-content\/uploads\/2026\/03\/mangu-con-bacalao-de-autor-768x1024.jpg\" alt=\"Mang\u00fa con bacalao de autor una receta muy habitual en la rep\u00fablica dominicana\" class=\"wp-image-2551\" style=\"border-top-left-radius:20px;border-top-right-radius:20px;border-bottom-left-radius:20px;border-bottom-right-radius:20px\" srcset=\"https:\/\/rtvgastro.es\/wp-content\/uploads\/2026\/03\/mangu-con-bacalao-de-autor-768x1024.jpg 768w, https:\/\/rtvgastro.es\/wp-content\/uploads\/2026\/03\/mangu-con-bacalao-de-autor-225x300.jpg 225w, https:\/\/rtvgastro.es\/wp-content\/uploads\/2026\/03\/mangu-con-bacalao-de-autor-9x12.jpg 9w, https:\/\/rtvgastro.es\/wp-content\/uploads\/2026\/03\/mangu-con-bacalao-de-autor.jpg 822w\" sizes=\"auto, (max-width: 768px) 100vw, 768px\" \/><\/figure>\n\n\n\n<p>Para esta preparaci\u00f3n lo desalamos como de costumbre y lo confitamos en aceite de oliva unos 9\/10 minutos, reserv\u00e1ndolo en el mismo aceite cerca del calor. <\/p>\n\n\n\n<p>Mientras, pochamos unas verduras, cebolla, pimiento rojo y verde, puerro, que usaremos para aportar sabor al bacalao.<\/p>\n\n\n\n<p>En principio esta es la manera tradicional. Pero vamos a intentar darle una vuelta y hacer de este plato dom\u00e9stico un plato digno de presentarse en un restaurante.<\/p>\n\n\n\n<p>Para ello necesitaremos los ingredientes de la receta original y alg\u00fan texturizante como el instangel o en su defecto agar agar. As\u00ed como salicornia, brotes y flores comestibles.<\/p>\n\n\n\n<p>Para este plato procesaremos el mang\u00fa en la thermomix para conseguir una textura fina. <\/p>\n\n\n\n<p>A este pur\u00e9 le a\u00f1adimos instangel en la proporci\u00f3n que marca el fabricante, restando ligeramente un poco. No queremos una gominola,\u00a0 buscamos una consistencia suficiente para que mantenga la forma y pueda soportar sobre \u00e9l los ingredientes restantes. <\/p>\n\n\n\n<p>Para conseguir esta forma utilizaremos dos aros uno mayor que otro y los pondremos en un plato cubierto por papel film para evitar que se escurra por debajo. <\/p>\n\n\n\n<p>Tras preparar el pur\u00e9 con el instangel y dejarlo templar un poco, rellenamos la circunferencia para conseguir lo que aparece en la foto. Dejamos enfriar y reservamos.<\/p>\n\n\n\n<p>El bacalao que habremos confitado lo laminados guardando la piel entre dos papeles de horno para secarlos al horno o poni\u00e9ndola en el microondas en descongelaci\u00f3n para conseguir una piel de bacalao crujiente para aportar sabor y decorar el plato.<\/p>\n\n\n\n<p>Vamos disponiendo el resto de ingredientes sobre el mang\u00fa de forma bonita y proporcionada.
